4 Quick, Healthy and Easy Meals for Busy Days
A WAHM's days are packed between working, caring for the kids, picking up the house, and perhaps homeschooling. Who has time to spend an hour in the kitchen cooking dinner?
Fortunately, thanks to
these easy meals, cooking time is one area of your life you can skimp on.
The next time you're facing a busy day or a hectic night,
make one of these quick, healthy meals with ingredients you likely already have
in your pantry:
Taco Filling
In a slow cooker, combine two chicken breasts, one jar
salsa, one can black beans, and two cups of frozen corn. Cook on low for 5 to 8 hours. Shred the chicken and return to the slow
cooker.
This can be used as taco filling or simply scooped up on
nachos. Serve with cheese on the top if
you'd like.
Vegetarian Quesadillas
If you have some frozen mixed veggies as well as flour
tortillas and cheese (Chihuahua cheese is best!), you can make
quesadillas. Simply cook the mixed
veggies and drain. Put the flour
tortilla on a skillet then top with cheese and veggies. Add another tortilla on top and flip when
browned on the first side. Brown on the
other side and cut into six wedges. Dip
in salsa if you'd like.
Pita Pizza
Cut a pita in half, keeping each round whole. Lay on a baking sheet and cook at 350 until
the pita is browned. Spread spaghetti sauce
on top as well as cheese and veggies and whatever cooked meat you have on
hand. Put back in the oven until the
cheese is melted and enjoy!
Veggie Pita Pocket
Cook up frozen winter blend veggies (cauliflower, broccoli,
carrots). After they are cooked, put
them in a bowl and add ranch dressing to taste as well as shredded cheddar
cheese. Then, take a pita and cut in
half to create two pockets. Stuff the pita
with the warm filling and enjoy.
